The extremes you mention, enough to kill plants, is very rare with any stress environment. the danger more comes with Human consumption afterwards. plants can also learn and adapt to cope better within their own life time. this means that plants can and do protect themselves from various extremes of whatever. for example not all plants will suffer and die from the same pollutants. although plants do have protection against those too.
